Stew and Dumplings. Stew and Dumplings is a really hearty dish and it is the perfect food for a cold day.

Ingredients for British Beef Stew With Dumplings •2 tbsp plain / all purpose flour •500g / 1lb round steak/ thick braising steak cut into 2"/5cm chunks •2 tbsp vegetable oil •2 tbsp brandy •115g / 1 cup onion, roughly chopped •100g / 1 cup leeks, cleaned and finely sliced •170g / 1 cup carrots, roughly chopped •750 ml / 1 ½ pints dark beef stock •100g/ 4 oz self raising flour •50g/ 2 oz shredded suet •Salt and Pepper

Instructions for Making Beef Stew and Dumplings

The first thing we need to do is mix this braising steak so that the steak is completely covered in flour. Into a large frying pan then we're going to put the vegetable oil and heat that up. Once the oil is nice and hot we're going to put about half of the steak into the frying pan, this is to brown the meat. If you put all of the beef into the pan you don't actually brown the meat, you steam it.

Additional Instructions for Making Beef Stew and Dumplings

Once the meat's browned we put it into the casserole dish and then add the remaining beef into the frying pan. Then into the casserole dish I'm going to add the remaining flour.

Into the pan we used to brown the meat we put the brandy in, then into there I'm going to add the vegetables, so I've got some onion, carrot and leeks. The vegetables now go into the casserole dish, and then over there I'm going to pour some of this lovely beef stock. Then it goes into the oven at 180 degrees Celsius for 2 hours.

Making the Dumplings for the Stew

While the stew's cooking in the oven we're going to make the dumplings. Into a mixing bowl I'm going to put the self raising flour, the beef suet, a little pinch of salt and then I'm going to mix this with a little cold water, just a little bit at a time until it brings the dough together. Once we've got a ball of dough there in the bowl I'm going to divide this into eight, then with a little flour I'm going to roll them into a ball. Once the dumplings are rolled, cover them with a tea cloth, ready for when the stew's cooked.

So the stew's had a good two hours in the oven, so just going to put the eight dumplings in, just drop them onto the surface of the stew. The lid goes back on, and this goes back in the oven now for about 20 minutes.

Our Stew and Dumplings have had 20 minutes, and have a look at that. What could be better on a cold day than a delicious bowl of Stew and Dumplings.

So the stew's had a good two hours in the oven, so just going to put the eight dumplings in, just drop them onto the surface of the stew. The lid goes back on, and this goes back in the oven now for about 20 minutes.
